Cannoli Waffles

I like waffles. I like cannolis. So I made cannoli waffles.

This is a recipe I came up with back in 2013 and previously published on an old personal website. I can’t say the world was demanding I republish it here, but I do feel like the internet was missing something without it. Because that Stonewall Kitchen version is b.s.

The waffle recipe is based on one from the Good Housekeeping Illustrated Cookbook. Meanwhile, the cannoli recipe is based on the recipe on the side of the Ferrara Cannoli Shells box. (Am I a bad Italian for admitting that?)

When you make the full recipe, you will probably have more cannoli filling than you need. I could have adjusted the recipe accordingly, but to be honest, I like to have cannoli filling for breakfast.

For six servings:

Waffle Ingredients Cannoli Ingredients
1 3/4 Cup Flour 12 Ounces Ricotta
1 Tablespoon Baking Powder 4 Ounces Powdered Sugar
1/2 Teaspoon Salt 1/4 Teaspoon Vanilla
1 Teaspoon Cinnamon 2 Ounces Mini Chocolate Chips
2 Cups Milk Dash of Cinnamon
1 Tablespoon Vanilla
1/3 Cup Vegetable Oil
2 Eggs
1/4 Cup Pistachios, Crushed

To make the waffle batter, mix together the flour, baking powder, salt, and cinnamon in one bowl. In another bowl, whisk together the milk, vanilla, oil, and eggs. Add the wet mixture to the dry mixture and stir just until the flour mix is wet and not clumping. Let the batter rest for at least 30 minutes. Start heating up the waffle maker.

To make the cannoli filling, sift the powdered sugar into a bowl. Next, add the ricotta and stir until fully combined. Then add the vanilla, mini chocolate chips, and cinnamon and stir until just combined.

When the waffle maker is ready, cook the waffles as directed by your waffle maker manufacturer. I have a round waffle maker (well, two round waffle makers), so in my kitchen this recipe makes six waffles total. If you have a square waffle maker, your mileage may very. Keep all the waffles warm until ready to serve.

To assemble, top each waffle with a healthy dollop of the cannoli mix, then dust with the crushed pistachios.
